Corn Kale Salad

Ingredients:
- 1-2 cans of corn (drained)
- 2 bunches of kale
- stems removed and discarded
- leaves torn into bite-sized pieces
- 1 large red bell pepper (chopped)
- 1/4 cup of pineapple juice
- 1/4 cup of olive oil
- 2 tablespoons of salsa
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of salt
- or more based on taste
Steps:
- Bring a pot of water to a boil; add the kale and a teaspoon of salt.
- Boil kale for about 5 minutes or until it appears bright green and tender
- Drain and set kale aside to cool
- Once cool enough to handle, squeeze as much liquid possible from the kale
- Separate the leaves and add to bowl with the corn.
- Add the red bell pepper into the corn and kale mixture
- Mix pineapple juice, olive oil, salsa, garlic powder, and onion powder together in a separate bowl
- Add the dressing to the vegetable mixture
- Enjoy!
