Corn Kale Salad

This nutritious salad can be paired with a main dish or enjoyed alone. With a blend of sweet and savory, this meal will be sure to leave your tastebuds happy!


Corn Kale Salad

Ingredients:

  • 1-2 cans of corn (drained)
  • 2 bunches of kale
    • stems removed and discarded
    • leaves torn into bite-sized pieces
  • 1 large red bell pepper (chopped)
  • 1/4 cup of pineapple juice
  • 1/4 cup of olive oil
  • 2 tablespoons of salsa
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of salt
    • or more based on taste

Steps:

  1. Bring a pot of water to a boil; add the kale and a teaspoon of salt.
    • Boil kale for about 5 minutes or until it appears bright green and tender
    • Drain and set kale aside to cool
    • Once cool enough to handle, squeeze as much liquid possible from the kale
    • Separate the leaves and add to bowl with the corn.
  2. Add the red bell pepper into the corn and kale mixture
  3. Mix pineapple juice, olive oil, salsa, garlic powder, and onion powder together in a separate bowl
  4. Add the dressing to the vegetable mixture
  5. Enjoy!
