Canned Corn Salad

This easy to assemble salad will cure all your cravings for a healthy, savory meal. This corn salad is great to eat by itself or even with chips!

Ingredients:

  • 15 oz can of corn
  • 15 oz can of black beans
  • 1 bell pepper
  • 1 red onion
  • 14.5 oz can of tomatoes
  • 1/2 cup of plain greek yogurt
  • 1/2 cup of cilantro
  • 2 cloves of garlic
  • 1/2 cup of cotija cheese
  • juice of 2 limes

To Taste:

  • salt
  • pepper
  • olive oil
  • cumin
  • chili powder
  • honey

Steps:

  1. Drain corn, tomatoes, and black beans.
  2. Mince garlic. Dice bell pepper and onion. Chop cilantro.
  3. Heat 1 tablespoon of olive oil on medium heat. Add corn and garlic to the oil once heated. Stir occasionally for about 8-10 minutes or until corn begins to brown.
  4. Combine the yogurt and lime juice. Add salt, pepper, cumin, chili powder, and honey to taste.
  5. In a large bowl, add the toasted corn and garlic, black beans, bell pepper, onion, tomatoes, cilantro, and dressing from step 4.
  6. Top with cotija.
  7. Enjoy!
