Canned Corn Salad

Ingredients:
- 15 oz can of corn
- 15 oz can of black beans
- 1 bell pepper
- 1 red onion
- 14.5 oz can of tomatoes
- 1/2 cup of plain greek yogurt
- 1/2 cup of cilantro
- 2 cloves of garlic
- 1/2 cup of cotija cheese
- juice of 2 limes
To Taste:
- salt
- pepper
- olive oil
- cumin
- chili powder
- honey
Steps:
- Drain corn, tomatoes, and black beans.
- Mince garlic. Dice bell pepper and onion. Chop cilantro.
- Heat 1 tablespoon of olive oil on medium heat. Add corn and garlic to the oil once heated. Stir occasionally for about 8-10 minutes or until corn begins to brown.
- Combine the yogurt and lime juice. Add salt, pepper, cumin, chili powder, and honey to taste.
- In a large bowl, add the toasted corn and garlic, black beans, bell pepper, onion, tomatoes, cilantro, and dressing from step 4.
- Top with cotija.
- Enjoy!
